Preserved Lemons

An essential ingredient in Moroccan tagines, and equally delicious in couscous, salads and casseroles. Chop finely with parsley & sprinkle over lamb shanks in winter, or push under the skin of a chicken prior to roasting. In summer, add to mayonnaise and serve with barbecued seafood.

There is a strawberry farm near Port Macquarie that grows the most amazing, sweet strawberries. We get them when we can and hand-hull every one, before cooking them carefully in small batches to retain their flavour and colour. This strawberry jam is a truly local delight.
