Fresh chilli and garlic grown on the Mid North Coast of NSW Australia are combined with ginger, onion and aromatic spices, then roasted to release their flavour and fragrance. Then we add chunks of sweet, juicy mango with a splash of locally made red wine vinegar. It is then cooked gently until it turns into a sweet chutney with a mild heat, full of flavour and ready to be paired with prawns, salmon or even chicken.
