We start with fresh garlic grown on the Mid North Coast of NSW Australia. A month-long process turns this garlic inky black and it develops a date-like texture. The umami-packed black garlic now has a sweet & earth taste, without the bitterness of raw garlic. Combined with the chocolaty, nutty and earthy flavours of white truffle, the taste of this mustard can only be described as out of this world.
